2. Customer is sent a link via email which will take them to the download.

Another option is just a straight download link, however it will gather no data from your customers.

Option 2. Formidable Pro to Upload files

This option is for customers to submit documents directly to you through your website, it is a very versatile plugin, I totally recommend having it included with your plugins.
